Eggplant and rosemary pizza with rocket

I had a few children telling me that they really didn’t like eggplant at all, so I made a deal that if they tried this pizza and really didn’t like the eggplant they wouldn’t have to eat a whole piece. Do you think there was any left? Nooooo! This pizza is delicious – and if you cook off the thin slices of eggplant first before you compile and bake the pizza,  like in the recipe below they simply melt into the cheesy tomato heavenliness…

Ingredients:

Pizza sauce:

  •       1 onion
  •       2 cloves garlic
  •       5 sprigs each oregano & thyme
  •       1/4 cup extra-virgin olive oil
  •       1 tin diced tomatoes
  •       Flaked salt and black pepper

For the pizza topping:

  •       A selection of small, medium or large eggplant
  •       A large sprig of rosemary
  •       1/4 cup extra-virgin olive oil
  •       75g parmesan cheese
  •       A tub of bocconcini
  •      A handful of rocket

What to do:

  1. Preheat the oven to 250C.
  2. Scatter a little flour on the workbench, divide the dough in two and roll to form four large rectangles to fit two each onto the baking trays.
  3. Lightly flour the trays and then assemble the pizzas directly onto the trays.

For the tomato sauce:

  1. Peel and finely chop the onion and garlic.
  2. Heat the olive oil in the first frying pan & gently cook the onion and garlic until translucent but not brown.
  3. Open the tin of tomato and add to the frying pan with a pinch of salt and a grind of pepper.
  4. Wash, dry and strip the herbs from the stalks, then add to the tomatoes.
  5. Simmer gently for 10 minutes, stirring occasionally, until quite reduced.

For the topping:

  1. Wash the eggplant and pat them dry, then using the mandoline carefully slice into thin whole rounds, then tip the sliced eggplant into the large bowl and drizzle with most of the oil.
  2. Wash the rosemary and pat dry, then strip the needles from the stalks and chop them using a large knife.
  3. Add the rosemary and a sprinkle of salt and pepper to the eggplant slices, then mix together so that all the slices are lightly oiled.
  4. Heat the other frying pan and cook half the eggplant for 3 to 4 minutes each side, then place a piece of paper towel onto the large plate and slide the eggplant onto the plate to drain. Cook the remaining eggplant.
  5. Weigh the parmesan first and cut and weigh again to make sure you have the right amount, thengrate the piece.
  6. Cut each mozzarella ball onto thin slices.
  7. Rinse the rocket leaves in several changes of cold water and dry them in the salad spinner.

Assembling the pizza:

  1. Divide the tomato sauce between the pizzas and spread, leaving a border on each pizza. Dot the mozzarella over.
  2. Arrange the slices of eggplant on the pizzas.
  3. Sprinkle most of the parmesan over the eggplant, keeping some aside.
  4. Drizzle the pizzas with the last of the oil, then place the pizzas in the oven for about 10 minutes or until the edges are very crusty and the cheese is bubbling.

Finishing off:

  1. While the pizza is baking you can make the dough for the next class.
  2. You may want to slip the pizza off the tray onto the rack for the last few minutes, so that you get a really crusty base.
  3. Once the pizzas are done, transfer them to the wooden chopping boards using the wide egg lifter.
  4. Cut the pizzas in half, and then into small squares and then slide half a pizza onto each plate.
  5. Top each with a handful of the rocket leaves and remaining parmesan.

Autumn pizza with herby mushrooms and rocket

Pizza – and making, rolling and stretching out dough – is a surefire winner with kids, and you get to put any number of cunning vegetables on the top, in the form of pizza sauce and artfully decorated toppings… and the smell from the oven as the pizza cooks! Devine…

Makes: 2 large or 4 small pizza

  • Bowls – 2 medium, 2 small
  • Salad spinner
  • Rolling pins
  • Grater
  • 2 large oven trays
  • Wide egg lifter
  • Large wooden board
  • Pizza cutter
  • Tablespoon measure, scales
  • Kitchen towel
  • Tongs
  • Metal spoons
  • Serving plates
Ingredients:

Tomato sauce:

  • 1 onion
  • 2 cloves garlic
  • 3 sprigs thyme
  • ¼ cup extra-virgin olive oil
  • 1 tin diced tomatoes
  • Flaked salt and black pepper

For the pizza topping:

  • A handful mushrooms
  • Small handful mixed herb sprigs
  • 2 garlic cloves
  • 1 tub bocconcini
  • 2 tablespoon extra-virgin olive oil
  • 50g parmesan
  • Flaked salt and black pepper
  • A handful of rocket

What to do:

  • Preheat the oven to 220C. You can prepare the topping now while you wait for the oven to heat up.

For the tomato sauce:

  • Peel and finely chop the onion and garlic, reserving half of the garlic for the topping.
  • Heat the olive oil in the frying pan & gently cook the onion until translucent but not brown.
  • Add the garlic to the pan, then open the tin of tomato and add to the frying pan with a pinch of salt and a grind of pepper.
  • Wash, dry and pick the thyme and add to the tomatoes.
  • Simmer gently for 10 minutes, stirring occasionally, until quite reduced.

For the topping:

  • Wipe the mushrooms and break or slice into thin slices into a big bowl. Drizzle with a tablespoon or two of olive oil and a pinch of salt.
  • Wash and carefully dry the herb sprigs – pick the leaves, discarding the stalks – and add to the mushrooms. Peel the garlic and squeeze through the press into the mushrooms. Stir.
  • Tear each ball of bocconcini in half. Grate the parmesan.

Assembling the pizza:

  • Scatter some flour on the table and roll the dough out to form 2 even rectangles to cover the baking trays.
  • Assemble the 2 pizza directly onto the trays, flouring the trays well first.
  • Using the metal spoon, swirl a couple of spoonfuls of tomato sauce onto the pizza bases, spreading so that they become totally covered.
  • Layer the bocconcini on top and season well, then scatter the herby mushrooms over the pizza and then the parmesan.

Baking the pizza:

  • Bake the pizza for about 12 minutes or until the edges are very crusty and the cheese is bubbling.
  • Use this time to make the dough for the next class if needed.
  • You may want to slip the pizza off the tray onto the rack for the last few minutes, so that you get a really crusty base.
  • Meanwhile wash the rocket and spin dry. Leave the leaves whole.
  • Once the pizza is done, transfer it to a large wooden board using the wide egg lifter.
  • Cut the pizza crossways into small squares, and divide onto serving plates.
  • Sprinkle the rocket over the slices and then get ready to eat!

Sean’s linguine with shredded rocket, lemon, chilli and parmesan

This dish has been a staple on Sean’s menu since he opened in 1993, and continues to be one of the most popular dishes… a simple dish; great produce being the most important thing!

From the garden: rocket, lemon, chillies, garlic
Recipe source: adapted from the recipe by Sean Moran at Sean’s Panaroma in ‘Let It Simmer’
Serves: 6 at home or 24 tastes

Equipment:

  • Large stockpot
  • 2 large bowls
  • Chopping board
  • Grater, citrus juicer
  • Measuring jug, tablespoon
  • Scales
  • Tongs
  • Serving bowls

 

Ingredients:

  • 500g linguine
  • 5 generous handfuls rocket
  • 100g parmesan (preferably Parmigiano or grana padano)
  • 2 garlic cloves
  • 1 lemon
  • 1 tablespoon chilli oil (see separate recipe)
  • 100ml extra-virgin olive oil
  • Salt & freshly ground pepper

What to do:

  • Three-quarters fill the large stockpot with cold water and bring to the boil.
  • Wash and spin dry and then coarsely shred the rocket into ribbons with a sharp knife.
  • Weigh to measure then coarsely grate the parmesan.
  • Squeeze and strain the juice from the lemon, then squeeze the garlic through the press and combine with lemon juice, chilli oil and olive oil in a bowl large enough to toss the linguine (you may need 2 bowls, so then divide the mixture between them).
  • Throw a handful of salt into the boiling water and let it return to the boil. Cook pasta until al dente – fresh pasta should take about one minute – then lift it into the prepared bowl with tongs, draining it as you go yet taking a slight drizzle of the cooking water with the pasta (this will lubricate and combine dressing).
  • Add the shredded rocket and parmesan, then season and toss together just before serving.
  • Divide into your serving bowls and eat immediately!

Ingredients:

For the pizza topping:

  • 1 handful mushrooms
  • 1 tub bocconcini
  • 2 tablespoons extra-virgin olive oil
  • 2 cloves garlic
  • 30g parmesan

  • Aged balsamic vinegar

Tomato sauce:

  • 1 onion
  • 2 cloves garlic
  • 3 sprigs marjoram
  • ¼ cup extra-virgin olive oil
  • 1 tin diced tomatoes
  • Flaked salt and black pepper

What to do:

  • Preheat the oven to 220C.

For the tomato sauce:

  • Peel and finely chop the onion and garlic, reserving half of the garlic for the topping.
  • Heat the olive oil in the frying pan & gently cook the onion and garlic until translucent but not brown.
  • Open the tin of tomato and add to the frying pan with a pinch of salt and a grind of pepper.
  • Wash, dry and pick the herbs. Roughly chop then add to the tomatoes.
  • Simmer gently for 10 minutes, stirring occasionally, until quite reduced.

For the topping: 

  • Wipe the mushrooms free of dirt using a piece of paper towel and finely slice. Drop them in to a big bowl, drizzle about a tablespoon of olive oil and a pinch of olive oil and toss to combine.
  • Open the tub of bocconcini and cut each ball into 3 or 4 slices.
  • Wash and spin the rocket dry and then reserve in another large bowl.
  • Grate the parmesan and add it to the rocket with a tablespoon or two of olive oil and a teaspoon of balsamic vinegar. Gently toss to combine.

Assembling the pizza:

  • Scatter some flour on the workbench, divide the dough in two and roll to form two thin shapes about 26 cm in diameter.
  • Assemble the pizzas directly onto the trays, flouring the trays first.
  • Usingthe metal spoon, swirl a couple of spoonfuls of tomato sauce onto the pizza bases, spreading so that they become totally covered with a clean border.
  • Layer the bocconcini on top, spoon on the garlicky mushrooms, then slide the pizzas into the oven.
  • Wash and dry the wooden chopping boards and set them out ready.

Baking the pizza:

  • Bake the pizzas for 12 minutes or until the edges are very crusty and the cheese is bubbling.
  • Use this time to make the dough for the next class if needed.
  • You may want to slip the pizza off the tray onto the rack for the last few minutes, so that you get a really crusty base.
  • Once the pizzas are done, transfer them to the wooden boards using the wide egg lifter.
  • Cut the pizzas in half first, and then each half into squares for each plate.
  • Lift onto serving plates and sprinkle with the rocket and parmesan.
  • Eat!

Mini chive, gruyere and rocket frittate

Tasty little morsels – these are lovely just warm out of the oven with a dollop of basil aioli or even cold to pop in a lunch box!

Makes: 48 mini frittate

Equipment

  • Pastry brush
  • 2 mini muffin pans
  • Paper towel
  • Scissors
  • Graters
  • Bowls – big, small
  • Chopping board & knife
  • Whisk
  • Salad spinner
  • Measures –  jug, cup, tablespoon, teaspoon
  • Serving plates
Ingredients:

  • 2 tablespoons olive oil
  • A small bunch of chives
  • 9 eggs
  • 200ml thickened cream
  • 50g gruyere
  • 30g parmesan
  • A small handful rocket plus extra to garnish
  • 2 or 3 sprigs of parsley
  • Basil aioli

What to do:

  • Preheat oven to 180°C. Brush the holes of the non-stick mini muffin pans with a little of the oil.
  • Wash the chives and pat dry with paper towel. Using the scissors, thinly snip. Divide the chives between the mini-muffin holes.
  • Measure and coarsely grate the gruyere. Finely grate the parmesan. Sprinkle the cheeses into each of the chive holes.
  • Wash, spin-dry and shred most of the rocket to yield about a cup, reserving a few leaves for the garnish. Wash and spin-dry the parsley, discard the stalks and chop the leaves to yield about a tablespoon. Add these too to the pans.
  • Crack the eggs into a large bowl and lightly whisk. Measure the cream & add into the same bowl, whisk again and then carefully pour into the prepared pans.
  • Bake for 20 minutes or until just set.
  • Meanwhile clean up your station & then make the aioli (see separate recipe).
  • When the frittate are ready, set aside in pans for 5 minutes to cool slightly before dividing onto your serving plates. Soak the pans in water straight away…!
  • Garnish your serving plates with the rocket, add the frittate, serve with a dollop of aioli & eat!

Green soup!

(Rocket, silverbeet and potato…)

These sunny-but-cool days & lengthening nights sing to me of soup, soup and more soup – and this is a great way to use up the bolting rocket!

Green soup!

Fresh from the garden: rocket, silverbeet, potatoes, chives
Recipe source: Melissa
Serves: 8 or 24 tastes

Equipment:

  • Kettle
  • Scales
  • Chopping boards & knives, scissors
  • Peelers, garlic press
  • Bowls – big
  • Salad spinner
  • Large stockpot
  • Wooden spoon
  • Measures – litre jug, tablespoon
  • Handheld mixer
  • Ladle
  • Serving bowls
Ingredients:

  • 500g waxy potatoes
  • A small bunch of chives
  • 1 big bunch rocket
  • 2 or 3 silverbeet stems & leaves
  • 4 cloves garlic
  • 50g unsalted butter
  • 1 litre water
  • 1 tablespoon bouillon
  • Black pepper

What to do:

  • Fill the kettle and, making sure you have dry hands, set it to boil.
  • Peel the potatoes under running cold water & cut into 2cm cubes.
  • Wash the chives, shake dry and slice into 1cm bits.
  • Peel the garlic cloves and squeeze them through the garlic press.
  • Melt butter in the large stockpot over medium heat and sauté the chives and garlic for a minute, and then add the potato cubes and turn so that the potato sweats in the butter.
  • Meanwhile wash the rocket in several changes of water and spin dry. Roll up and slice into thin ribbons.
  • Wash the silverbeet in several changes of water and shake dry. Slice or cut the leaves up the middle to remove the stems, then chop them into cm pieces. Roll up the leaves and finely slice them into ribbons.
  • Measure the bouillon & boiling water into a litre jug, stir and then pour it into the potatoes. Bring them to a boil, then turn down to a simmer, cover and cook gently over low heat for 10 minutes, then add the silverbeet stalks.
  • Cook for 2 minutes – check that the potato is tender, then stir in rocket and silverbeet leaves. Increase heat to medium and simmer for another 2 minutes. If it’s really thick you may want to add another cup of hot water.
  • With dry hands, plug in the handheld mixer and carefully whizz the soup until it is silky smooth.
  • Taste for correct seasoning (the bouillon is salty so you may not need any extra salt) and ladle into bowls to serve.

Mushroom and rocket frittate

We love eggs! They are so versatile… and we also love the magic combination of eggs with mushrooms… this recipe has heaps of different things to do so great for budding chefs! The original also calls for spinach but we had heaps of rocket to use instead – the pepperiness isn’t so obvious once the rocket has wilted…

Serves: 12 frittate or about 30 small

Equipment:

  • Muffin tins (12-hole large or 2 x 24-hole mini)
  • Pastry brush
  • Chopping board & knife
  • Bowls – large, medium
  • Salad spinner
  • Large frying pan
  • Wooden spoon
  • Whisk, spoons
  • Scales
  • Serving plates
Ingredients:

  • 2 tablespoons olive oil plus extra for greasing
  • 2 spring onions
  • 300g mushrooms of your choice!
  • 300g fresh rocket
  • A sprig or two of thyme
  • A good grind of pepper
  • 1 pinch flaked salt
  • 8 eggs
  • 1/3 cup milk
  • 100g feta cheese

 

What to do:

  • Preheat the oven to 180C. Lightly grease the muffin tin holes with a pastry brush and a teaspoon or 2 of olive oil.
  • Wash the spring onions, stripping the first layer off and trimming any dried-up ugly parts.  Thinly slice the white & green parts but keep them in separate bowls.
  • Wipe the mushrooms with a piece of paper towel – do not wash them! Slice finely.
  • Wash and spin-dry the rocket. Roll it up & slice into thin ribbons.
  • Wash and wipe the thyme dry, then strip from the stalks.
  • In the frying pan, heat oil over medium-high heat; cook the white parts of spring onions, stirring for 1 minute. Add the mushrooms, thyme, pepper and salt and cook on a low heat, stirring occasionally until no liquid remains and mushrooms are light golden for about 5 minutes.
  • Stir in the rocket and cook, stirring, until wilted for about 1 minute. Remove from heat and then stir in the green parts of green onions. Divide among the muffin cups and set aside.
  • Break the eggs into a large bowl and whisk lightly, then add the milk and beat again. Spoon the egg mixture evenly among muffin cups. Weigh the feta cheese & then crumble it up and then sprinkle into each hole.
  • Bake in 180C oven until edges are set, about 10 minutes for the large (or 7-8 minutes for the small) then let cool in pan on rack for a few minutes.
  • Divide among serving plates. Yum!

Autumn fridge soup

Today dawned cold, rainy and most definitely autumnal after a month of lovely Indian summer… perfect soup weather! And no better excuse to clean out the scary fridge drawers of limp & sad veggies, and freezer of half-blocks of icy stock…

Fridge soup: rocket, spinach, lentil goodness

Fresh (or not!) from the fridge: I used half a Spanish onion, a brown onion, a potato, a carrot, some very floppy spring onions, garlic, some rocket from about a week ago and some spinach stalks that I was saving for the chooks (sorry girls).

Equipment:

  • 1 large, 1 med saucepans with lid
  • Kettle
  • Chopping board & knife
  • Peeler
  • Mandoline
  • Sieve
  • Measures – litre jug, cup
  • Colander
  • Bowls – big, med
  • Stick blender
  • Wooden spoon, ladle
  • Serving bowls
Ingredients:

  • 1 brown onion
  • ½ a Spanish onion
  • 3 soft spring onions
  • 1 tablespoon extra-virgin olive oil
  • 1 knob of butter
  • Flaked salt and freshly-ground black pepper
  • 2 cloves garlic
  • 1 large potato
  • 1 large carrot
  • About a litre of vegetable stock
  • A cup of red lentils
  • 3 bay leaves
  • A bunch of spinach stalks
  • A small handful of rocket (refreshed in a big bowl of cold water for 10 minutes…)

Fridge soup, green all over

What to do:

  • Pour the stock into the medium saucepan with lid on and heat to a simmer. (I had to semi-thaw mine before I could get it out of the container…)
  • Half fill the kettle and set to boil.
  • Measure the lentils into the sieve and give them a good rinse under the cold water tap, discarding any discoloured lentils or little stones.
  • Peel the onions and dice. Peel off the first layer of spring onion, tail and then slice into small discs.
  • Heat the olive oil and butter together in the large saucepan and then add all the onions and a sprinkle of flaked salt, stirring to coat.
  • Peel the potato under running water and then slice finely using the mandoline. Add to the sweating onions.
  • Peel and chop or slice the garlic and add that in too with the bay leaves.
  • Peel and the grate the carrot straight into the saucepan.
  • Pour the hot stock into the large saucepan, add the lentils and then simmer for about 10 minutes until the potato & lentils are tender. You may need to add a little extra hot water from the kettle, depending on how big a bunch of veggies you have.
  • Meanwhile wash the leafy veg thoroughly (discarding any manky bits), shake dry and chop into bite-sized pieces. Add any stalks into the soup to start cooking first, and then add the chopped leaves. Cook for another 5 minutes to wilt the green veggies.
  • Taste the soup to check seasoning and then puree with the stick blender.
  • Ladle into bowls to serve and add a grind of black pepper to finish.
  • Eat with buttery toasted Lebanese bread, and feel all warm and sustainable, all at the same time…

Rocket and basil pesto

For this alternative pesto, we add rocket leaves to the basil and pound them together but you could also try a parsley or even coriander combination… We love them all! It also seems like a lot of olive oil so tone it back if you like, but I think it’s warranted, especially over freshly cooked pasta & muddled with a ladleful of  pasta-water!

Handmade pasta, rocket & basil pesto

Makes: 3 cups

Equipment:

  • Mortar & pestle
  • Cheese grater
  • Medium frying pan
  • Tea towel
  • Scales
  • Measuring jug
  • Medium bowl
  • Tablespoon
  • Serving bowls if needed
Ingredients:

  • 1 bunch basil
  • 1 bunch rocket
  • 2 large garlic cloves
  • Salt
  • 80g pine nuts
  • 50g parmesan cheese
  • 200ml extra virgin olive oil

What to do:

  • Before you wash the basil or rocket, pick the stalks from the basil and discard. Weigh the leaves with the rocket – you’ll need about 100g all up.
  • Wash and then spin-dry the basil and rocket, you might need to do this in several stages to make sure the leaves are as dry as can be!
  • Grate the parmesan cheese.
  • Heat the frying pan on a medium heat and lightly dry-toast the pine nuts, shaking regularly so that they don’t stick.
  • Peel the garlic cloves and place in the mortar and pestle with a good pinch of salt. Pound these to a paste.
  • Add the pine nuts to the mortar & pestle and continue to pound. Once smooth-ish, transfer to the bowl and stir in the parmesan.
  • Tear the basil leaves and put them into the mortar. Pound the leaves to a paste. Return the pine nut mixture to the mortar and, pounding it all together, gradually pour in all the olive oil.
  • Taste for salt and adjust if necessary.
  • Mix into steaming hot pasta, spread on bruschetta, drizzle over tomato slices, serve as part of an antipasto plate with goats’ cheese and roasted capsicum or spoon into serving bowls to serve as a dip with flatbreads.

Potato, rosemary & rocket pizza

I think it’s a law that every child should love pizza… and mine certainly do! This one’s a very different style to the usual however, as there’s no tomato nor mozzarella – or even pineapple! But delish nevertheless, and is also a leeeetle bit healthy…

Potato, rosemary & rocket pizza

Fresh from the garden: potatoes, rosemary, rocket

Serves:  8 or 24 tastes

Equipment:

For the pizza dough:

  • Bowls – 1 small, 2 large
  • Fork
  • Scales
  • Measures: cup, ½ cup, tablespoon, teaspoon
  • Stand mixer with dough hook
  • Pastry brush
  • 2 large oven trays
  • Wide egg lifter
  • Large boards for cutting pizza
  • Pizza cutter

For the pizza topping:

  • Salad spinner
  • Scales
  • 2 clean, dry tea towels
  • Kitchen paper
  • Chopping board
  • Grater & peelers
  • Mandoline & mezzaluna
Ingredients:

For the pizza dough:

  • 1 cup lukewarm water
  • 3 teaspoons instant dry yeast
  • 1 teaspoon sugar
  • 1½ tablespoons extra virgin olive oil, plus extra for greasing
  • 400g plain flour, plus extra for flouring
  • 2 teaspoons cooking salt

For the pizza topping:

  • 3 handfuls rocket leaves
  • 100g parmesan cheese
  • 4 sprigs rosemary
  • 3 medium-to-large potatoes
  • 1/2 cup extra-virgin olive oil

 

What to do:

To make the dough:

  • Place the water, yeast and sugar in the small bowl. Mix with the fork and leave for 5–10 minutes until the mixture looks frothy.
  • Add the 2 teaspoons of oil to the yeast mixture and mix well.
  • Place the flour and salt and yeast mixture in the bowl of the stand mixer and beat for at least 8 minutes, until the dough looks smooth.
  • Brush the inside of a large bowl with a little of the extra virgin olive oil, using the pastry brush.
  • Turn the pizza dough into the oiled bowl. Cover with a clean, dry tea towel and put in a draught-free place until the dough has doubled in size. This process, which is called ‘proving’, will take at least 1 hour.

What to do:

Start of lesson:

  • Tip the risen dough onto the workbench and knead briefly, then shape it into a round ball and return it to the bowl.
  • Cover the bowl with the tea towel and leave again, this time for at least 20 minutes.
  • Preheat the oven to 200C. You can prepare the topping now while you wait for the oven to heat up.

For the topping:

  • Rinse the rocket leaves and dry them in the salad spinner. Shred the rocket into fine strips. Lay a piece of kitchen paper on a dry tea towel and spread the dry leaves over the paper and then roll the whole lot up like a log. Keep the rolled parcel of leaves in the refrigerator until needed.
  • Shave off pieces of parmesan using either a grater (if it has a wide slicing option) or a normal potato peeler.
  • Pull the rosemary needles from the stalks and chop them using the mezzaluna.
  • Peel the potatoes, washing them as you go, and slice them very thinly and very carefully using the mandoline & guard.
  • Tip the sliced potatoes into the large bowl and drizzle with most of the oil.
  • Add the rosemary and salt and pepper, then mix together so that all the slices are lightly oiled.

Assembling the pizza:

  • Scatter some flour on the workbench, divide the dough in two and roll to form two thin rectangles to fit the baking trays.
  • Assemble the pizzas directly onto the trays, flouring the trays first.
  • Arrange the slices of potato on the pizzas, overlapping them.
  • Sprinkle most of the Parmesan over the potato, keeping some aside.
  • Drizzle the pizzas with the last of the oil, then place the pizzas in the oven for about 10 minutes or until the edges are very crusty and the cheese is bubbling. 

Finishing off:

  • While the pizzas are baking you can make the dough for the next class (see above).
  • You may want to slip the pizza off the tray onto the rack for the last few minutes, so that you get a really crusty base.
  • Once the pizzas are done, transfer them to the wooden chopping boards using the wide egg lifter.
  • Cut the pizzas in half, and then into small slices or squares and then slide half a pizza onto each plate.
  • Top each with a handful of the shredded rocket leaves and remaining parmesan.
